This recipe is going to be the next breakfast comfort food- I'm sure of it! It's very simple but makes use of several of the best comfort and soul food ingredients we've got- collard greens, bacon, eggs.
The egg and bacon certainly don't count as health foods by any stretch of the imagination, but there comes a point when the healthiest thing you can do is to eat a really satisfying meal (ok, so I just made that up). Ever heard of
umami? This dish has it in spades! The recipe is also simple to prepare and is based on some very simple ingredients.
Ingredients
- 1 bunch fresh collard greens
- 1/4 lb. fresh bacon
- 1 egg
- Parmesan Cheese, from block
Procedure
- Break the stems from the collard greens just below the leaves. Wash in colander and set aside to drip dry.
- Slice bacon into ~1" pieces and add to frying pan. Heat over medium heat until bacon is cooked; no not drain drippings.
- When bacon is fully cooked, add collard greens to frying pan. Allow the greens to steam for a minute or so before stirring. Once greens have wilted somewhat, stir to coat greens with bacon grease. Do not overcook the greens.
- Once the greens have wilted to a suitable degree, break egg and add to the frying pan. Do not prescramble the egg. Using a spoon, quickly scramble the egg in the pan and coat the greens and bacon with the egg as it cooks.
- Once the egg is fully cooked, remove to a plate and shred Parmesan cheese over greens. Serve immediately.
